Grinding by Weight: How Mahlkönig Revolutionized the Coffee Industry

There are a million or more ways to brew coffee, but they all start in the same place: the grind.Having an accurate and adjustable grind size allows you to brew coffee that is perfectly balanced and tasty. Burr grinders keep the size of your grind consistent, but to get the same taste from cup to cup, you must also control the precise amount of coffee grounds. In espresso brewing, we call this the “dose.” If the dose weight changes, even by less than 1 gram, it can cause the espresso shot to have a bitter or sour flavor, totally ruining the taste.

In the past many grinders had “dosers” which collected pre-ground coffee and measured it out into the portafilter using a lever.

Another method of judging the dose is Volume, or simply looking to see how the coffee fills the basket. In most cafes, now, the ground coffee is weighed out on a separate scale. The grinder is then set for a specific amount of time, to produce that dose each time.

These dosing methods cause fluctuations, as they get affected by the condition of the coffee or the grind size adjustment.

Another method is pre-weighing the whole beans. This is time-consuming, though, and with retention in the grinder, you may wind up with a different dose ground than you expect.

The holy grail of coffee grinding is dosing by a pre-set weight.
Forget about dosing by a timer or dosing by volume. Grind-by-Weight delivers exactly the grams you set! Like the grail, this has been a hard-to-reach goal. It requires solving the physics problem of hanging a heavy portafilter on a scale. That scale must also be accurate, fast to respond, and robust enough to stand up to a busy cafe.

Enter Mahlkonig, and their GbW technology showcased in the E65S GbW and E80S GbW grinders. The integrated high-precision load cell underneath the portafilter support enables groundbreaking real-time scale-controlled dosing, as it monitors the weight during the entire grinding process. The grounds are actually weighed 6000 times per second!

The result: consistently accurate doses.
With grind speeds up to 8 grams per second, these grinders can keep up with even the busiest cafe. No auxiliary scale is needed, making the workflow smooth and freeing your focus up for extraction and customer interaction! Throughout the day, with changes in humidity, temperature, or even changing to a different coffee, you’ll continue to get the exact dose you want.

Overall, grinding coffee by weight is a simple and effective way to improve your coffee brewing process and ensure a consistent and high-quality cup of coffee every time. It is the future of coffee grinding, available now from Mahlkonig and Visions Espresso!
